Hakushika Sake, yep, sake

I hear it all the time, Sake is often described as "rice wine", but that's almost entirely false. Sake is made from rice, but is brewed more like a beer. In fact, it isn't really a wine or a beer but very much its own type of spirit much like you would say about vodka or rum.


Tonight I'm trying the Hakushika Yamadanishiki Junmai. Junmai simply means "pure", in that no alcohol or flavors are added to the sake.


The Yamadanishiki is completely flat, with no carbonation whatsoever (there are sparkling sakes, but are almost always artificially carbonated). Completely clear in color, the Yamadanishiki has a very light floral aroma. Much like a very soft sweet style of vodka, there are some very little hints of fruit and florals and just a tiny touch of alcohol.


On the palate the Yamadanishiki is crisp and clean, very smooth and finished with a slightly sweet note. Its very difficult to distinguish the subtle notes of flavor in sake. I think the best way I could describe it if you've never tried would be very much like a very smooth, soft, watered-down vodka.
